Parboiling is an industrial process of rice processing, in which so-called parboiled rice is produced. Paddy is first soaked in several steps, then treated with hot steam, then dried and then peeled and polished. During this treatment, about 80 percent of the vitamins and minerals contained in the silvery skin are pressed into the interior of the ricecorn, so that parboiled rice is more nutritionally physiologically valuable than husked white rice. Compared to full grain rice, it has a shorter cooking time. In addition to the increased vitamin and mineral contents, parboiled rice has improved texture properties and improved gelatinization capacity compared to polished rice. Boiled parboiled rice has a slightly stronger taste due to its content of aromatic flavor. About one-fifth of the world's rice production is processed into parboiled rice. During the parboiling process, the surface of the rice grains is simultaneously gelatinized by the starch contained therein.

Parboiling ist ein industrielles Verfahren der Reisbehandlung, bei dem der so genannte Parboiled-Reis hergestellt wird. Dabei wird Rohreis in mehreren Schritten zunächst eingeweicht, dann mit heißem Dampf behandelt, anschließend getrocknet und erst danach geschält und poliert. Während dieser Behandlung werden etwa 80 Prozent der im Silberhäutchen enthaltenen Vitamine und Mineralstoffe in das Innere des Reiskorns gepresst, so dass Parboiled-Reis ernährungsphysiologisch wertvoller ist als geschälter weißer Reis. Gegenüber Vollkornreis hat er eine kürzere Garzeit. Neben der erhöhten Vitamin- und Mineralstoffgehalten hat parboiled-Reis gegenüber poliertem Reis bessere Struktureigenschaften und eine verbesserte Verkleisterungsfähigkeit. Gekochter Parboiled-Reis hat einen etwas kräftigeren Geschmack durch seinen Gehalt an Aromavorläufern. Etwa ein Fünftel der Weltproduktion an Reis wird zu Parboiled-Reis verarbeitet. Während des Parboiling-Verfahrens wird gleichzeitig die Oberfläche der Reiskörner durch die enthaltene Stärke verkleistert.
