Sorbic acid, or 2,4-hexadienoic acid, is a natural organic compound used as a food preservative. It has the chemical formula C6H8O2. It is a colourless solid that is slightly soluble in water and sublimes readily. It was first isolated from the unripe berries of the rowan tree, hence its name.

The definition of sorbic acid in the dictionary is a white crystalline unsaturated carboxylic acid found in berries of the mountain ash and used to inhibit the growth of moulds and as an additive for certain synthetic coatings, as of cheese ; 2,4-hexadienoic acid. It exists as cis- and trans- isomers, the latter being the one usually obtained. Formula: CH3CH:CHCH:CHCOOH.
