विशेष—इसके बानाने की विधि यह है कि चावल में पहले हल्दी
डालकर इसे पानी में उबालते हैं । फिर उसमें से पानी पसा
लेते है और उसे दूसरे बर्तन में धी डालकर शक्कर के शर्बत में
पकाते हैं । पीछे से इसमें लौंग, इलायची आदि सुगंधित द्रव्य
और मसाले छोड़ दिए जाते हैं ।
२. एक विशेष क्रिया से बनाई हुई खाने की सुगंधित सुरती ।
विशेष—यह प्रायः काले रंग की होती है और पान दोहरा, आदि के साथ खाई जाती है । यह पीले और लाल रंग की भी
बनाई जाती है । वाराणसी इसका एक प्रमुख व्यापार-
केंद्र हैं ।
यौ०—जरदाफरोश=जरदा बेचनेवाला ।
३. पीले रंग का का घोड़ा । उ०—जरदा जिरही जाँग सुनौची
ऊदे खंजन ।—सुजान०, पृ० ८ । ४. पीली आँख का कबूतर ।

एक प्रकार का पक्षी । पीलू ।
विशेष—इसकी कनपटी पीली, पीठ खाली, पेट सफेद और चोंच
तथा पैर पीले होते हैं । इसे पीलू भी कहते हैं ।
