१. मनुष्यों और पशुओं आदि के शरीर के
अंतर्गत वह प्रसिद्ध चिकना, मुलायम, लचीला, लाल रंग का
पदार्थ जो शरीर का मुख्य अवयव है औऱ जो रेशेदार तथा
चरबी मिला हुआ होता है । गोश्त ।
विशेष—शरीर का यह अंश हड्डी चंमड़े, नाड़ी, नस और चरबी
आदि से भिन्न है । इसका एक अंश कंकाल से लगा हुआ छोटे
छोटे टुकड़ो में बँटा रहता है और वह ऐच्छिक कहलाता है,
अर्थात् इच्छानुसार उसका संचालन किया जा सकता है । ये
टुकड़े आपस में सुत्रों के द्वार जुड़े रहते हैं और उन सूत्रों के
हटाने पर सहज में अलग हो सकते हैं । इन टुकड़ों को मांसपेशी
कहते हैं । ये मांसपेशियाँ छोटी, बडी, पतली, मोटी आदि अनेक
प्रकार की होती हैं । आशयों, नलियों, भागों और हृदय आदि
अंगों का मांस, पेशियों में विभक्त नहीं होता । इन अंगों में
मांस की केवल पतली या मोटी तहें रहती हैं जो आपस में एक
दूसरी से बिलकुल मिली हुई होती हैं । ऐसा मांस अनैच्छिक या
स्वाधीन कहलाता है, अर्थात् इच्छानुसार उसका संचालन नहीं
किया जा सकता । मांस अथवा मांसपेशी मुलायम होने के
कराण चाकू आदि से सहज में कट जाती है । शरीर में सभी
जगह थोड़ा बहुत मांस रहता है और शरीर के भार में उसका
अंश प्रति सैकड़ें ४२-४३ के लगभग होता है । शरीर की सब
प्रकार की गतियाँ मांस के ही द्वार होती हैं । मांस आवश्य-
कता पड़ने पर सिकुड़कर छोटा और मोटा होता है और फिर
अपनो पूर्व अवस्था में आ जाता है । सुश्रुत के अनुसार मांस-
पेशियों की संख्या ५०० तथा आधुनिक पाश्चात्य चिकित्सकों के मत से ५१९ है । वैद्यक के अनुसार यह रक्त से उत्पन्न
तीसरी धातु है । भावप्रकास के अनुसार जब शरीर की अग्नि
अथवा ताप के द्वारा रक्त का परिपाक होता है और वह वायु के संयोग से घनीभूत होता है, तब वह मांस का रूप धारण
करता है । वैद्यक के अनुसार साधारणतः सभी प्रकार का मांस
वायुनाशक, उपचयकारक, बलबर्धक, पुष्टिकारक, गुरु, हृदयग्राही
और मधुररस होता है ।

२. कुछ विशिष्ट पशुओं के शरीर का उक्त अंश जो प्रायः खाया
जाता है । गोश्त ।
विशेष—हमारे यहाँ यह मांस दो प्रकार का माना गया है । जांगल
और आनूप । जंघाल विलस्थ, गुहाशय, पर्णमृग, विप्किर,
प्रतुद, प्रसह और ग्राम्य इन आठ प्रकार के जंगली जीवों का
मांस जांगल कहलता है, और वैद्यक के अनुसार मधुरस, कषाय,
रुक्ष, लघु, वलकारक, शुक्रवर्धक, अग्निदीपक, दोषघ्न और
वधिरता, अरुचि, वसि, प्रमेह, मुखरोग, श्लीपद और गलगंड
आदि का नाशक माना जाता है । कुलेचर, प्लय, कोशस्थ,
पादी और मत्स्य इन पाँच प्रकार के जीवों का मांस आनूप
कहलाता है और वैद्यक के अनुसार साधारणतः मधुररस,
स्निग्ध, गुरु, अग्नि को मंद करनेवाला, कफकारक तथा
मांसपोषक होता है । पत्तियों में से पुरुष जाति अथवा नर
का और चौपायों में स्त्री जाति अथवा मादा का मांस अच्छा
कहा गया है । इसके अतिरिक्त भिन्न भिन्न जीवों के मांस के
गुण भी भिन्न भिन्न होते हैं । साधारणतः प्रायः सभी देश
और सभी जातियों में कुछ विशिष्ट, पक्षियों और
मछलियों आदि का मांस बहुत अधिकता से खाया जाता है ।
पर भारत के कुछ धार्मिक संप्रदायों के अनुसार मांस खाना
बहुत ही निषिद्ध है । पुराणों में इसका खाना पाप माना गया है । कुछ आधुनिक वैज्ञानिकों और चिकित्सकों आदि का मत
है कि मांस अनेक प्रकार के स्वाभाविक भोजन नहीं है और उसके
खाने से अनेक प्रकारके घातक तथा असाध्य रोग उत्पन्न
होते हैं ।
