Gazpacho

Gazpacho - Spanish soup, originating from Andalusia. It does not require cooking and it is cold. It is usually made from raw vegetables, vinegar and olive oil with added sourness. Once the ingredients of the gaspacho were cut by hand, nowadays usually used to mix the mixer. Soups are often served in separate cups, which can be added to the soup at your own discretion. It is not certain where the soup comes from. It is believed that it can be derived from Latin - from the word caspo, meaning "small bits" or from the Arabic word for soggy bread. It is not known how the gazpacho reached Andalusia - Paul Wolfert believes that it came with the Moors and Raymond Sokolov - that it came from the Romans, who had the habit of eating bread soaked in olive oil. One of the most popular varieties of gazpacho is the Andalusian variety, based on tomatoes, preferably very ripe and soft, to which usually added vinegar, olive oil, garlic, paprika, green cucumber and bread. Gazpacho – hiszpańska zupa, wywodząca się z Andaluzji. Nie wymaga gotowania i jest podawana na zimno. Składa się zazwyczaj z surowych warzyw, octu i oliwy z dodatkiem rozmoczonego chleba. Niegdyś składniki gazpacho krojone były ręcznie, obecnie zazwyczaj do ich rozdrobnienia używa się miksera. Do zupy często podaje się umieszczone w osobnych miseczkach dodatki, które można według uznania samemu dorzucać do zupy. Nie jest pewne skąd pochodzi nazwa zupy. Przyjmuje się, że może się ona wywodzić z łaciny – od słowa caspo, czyli "drobne kawałeczki" – lub z arabskiego słowa oznaczającego rozmoczony chleb. Nie wiadomo również w jaki sposób gazpacho dotarło do Andaluzji – Paula Wolfert uważa, że przybyło ono wraz z Maurami, natomiast Raymond Sokolov – że pochodzi ono od Rzymian, którzy mieli zwyczaj jadać chleb namoczony w oliwie. Jedną z popularniejszych odmian gazpacho jest odmiana andaluzyjska, oparta na pomidorach, najlepiej bardzo dojrzałych i miękkich, do których dodaje się zazwyczaj ocet, oliwę, czosnek, paprykę, zielony ogórek i chleb.
