Chicha

Chicha is a fermented drink produced by the indigenous Andean peoples, dating back to the Inca Empire. But it was also used by the Mayans for food being the most popular among all beverages. Its preparation consists of girls chewing corn and spitting it into a cauldron of boiled water. In addition to the corn, consists of its ingredients Fennel, Cinnamon Stick, Citrus Fruits and, depending on the people or family, some other seasonings that can leave the same spicy taste. After fermented and traditionally filtered in a straw basket, the mixture is transformed into chicha. Before you drink it, the guests must perform a ritual, pouring some of the Chicha on the floor, then they step on and kneel on top of the spilled drink, in honor of their God, and after that can be drunk. The custom of girls chewing the corn happens because the female sex has a higher level of amylase in the saliva, a substance that breaks the sugars of the starch, enabling the transformation of this mixture into Chicha. Although corn is the most common ingredient, cassava or fruit may also be used. In the Andean countries, the term may refer to any home-brewed beverage. Chicha é uma bebida fermentada produzida pelos povos indígenas andinos, datando do Império inca. Mas também era usada pelos maias para a alimentação sendo a mais popular entre todas as bebidas. O seu preparo consiste em que garotas masquem milho e o cuspam em um caldeirão de água fervida. Além do milho, consiste em seus ingredientes o Funcho, o Pau de Canela, Frutas Cítricas e, dependendo do povo ou da família, alguns outros temperos que podem deixar o gosto da mesma picante. Depois de fermentada e filtrada tradicionalmente em um cesto de palha, a mistura se transforma em chicha. Antes de bebê-la, os presentes devem fazer um ritual, derramando um pouco da Chicha no chão,depois pisam e ajoelham em cima da bebida derramada, em homenagem ao seu Deus, e após isso pode ser bebida. O costume de garotas mascarem o milho acontece pois o sexo feminino possui maior nível de amilase na saliva, substância que quebra os açucares do amido, possibilitando a transformação dessa mistura em Chicha. Embora o milho seja o ingrediente mais comum, também podem ser usados mandioca ou frutas. Nos países andinos, o termo pode referir-se a qualquer bebida fermentada caseira.
