Escabeche is a typical Al-Andalus cuisine, prepared not only to give more flavor to a simple dish, like fried sardines or mackerel, but also to conserve food for longer, since the vinegar it carries serves as preservative; usually a dish seasoned with pickles is served cold, sometimes after being stored for a few days on the glacier, either as a main dish or as a soup. Apparently, the Romans used the vinegar to conserve meats and fish, according to the writings of Apicius. As can be seen below, meat escabeche is not much different from fish, but over time, it has become less popular, at least in Portugal and Spain. According to some sources, the name of this delicacy comes from the Arabic word "sicbédj", which literally means "food with vinegar". It is also reported that the "pickle" may be at the base of the cebiche, a similar preparation, but with raw fish or shellfish.

O Escabeche é um molho típico da Gastronomia do al-Andalus, preparado não só para dar mais sabor a um prato simples, como sardinhas ou carapaus fritos, mas também para conservar o alimento durante mais tempo, uma vez que o vinagre que leva serve como conservante; normalmente, um prato temperado com escabeche serve-se frio, por vezes, depois de guardado durante alguns dias na geleira, seja como prato principal ou como acepipe. Aparentemente, os romanos empregavam o vinagre para conservar carnes e peixes, segundo os escritos de Apicius. Como se vê abaixo, o escabeche de carne não é muito diferente do de peixe, mas ao longo do tempo, passou a ser menos popular, pelo menos em Portugal e Espanha. Segundo algumas fontes, o nome desta iguaria vem da palavra de origem árabe “sicbédj”, que significa literalmente “alimento com vinagre”. Também se refere que o “escabeche” pode estar na base do cebiche, uma preparação semelhante, mas com peixe ou marisco crus.
