Speck

La mota es una palabra inglesa que significa "gordo" o "grasa", atestiguada desde el siglo XVII temprano. Esta palabra también existe en alemán con el mismo significado, pero normalmente se refiere a la grasa de cerdo con o sin algo de carne en ella. El uso normal en inglés se refiere a los usos culinarios alemanes, particularmente del vientre de cerdo ahumado o en escabeche. En algunas partes del mundo culinario anglófono, el término "Speck" se refiere a Speck italiano, un tipo de prosciutto, en lugar de Speck alemán, que es idéntico al italiano "lardo". In parts of the English-speaking culinary world, the term "Speck" refers to Italian Speck, a type of prosciutto, rather than German Speck, which is identical to the Italian "lardo". The term "Speck" became part of popular parlance only in the eighteenth century and replaced the older term "bachen", a cognate of "bacon". There are a number of regional varieties of Speck, including: ▪ BaconBlack Forest SpeckGailtaler Speck from Austria, with PGI status, which has been made since the 15th century in Gail Valley in Kärnten. ▪ Lardo ▪ Pancetta ▪ Tiroler Speck from Austria's Tyrol region, which has PGI status, and has been made since at least the 15th century.
