근세포 속에 있는 헤모글로빈과 비슷한 헴단백질로 적색 색소를 함유하고 있어 조류나 포유류의 근육을 붉게 염색하는 물질이다. 아미노산 잔기 153개로 이루어지는 단일의 폴리펩티드 사슬과 2가의 철을 함유하는 1개의 헴으로 이루어진다.
