Gulaş es uno de los platos tradicionales de Hungría. Por lo general, está hecho de ternera, cebolla, pimiento rojo y pimienta. La raíz del gulash es un plato hervido que los pastores húngaros comen en el siglo IX. El nombre de su comida significa "ganado, buena persona, pastor" en húngaro. En el siglo IX, los pastores húngaros tomaron alimentos que podían llevar consigo cuando salían antes de conducirlos a pastar. Carne de pepino cocida con cebolla y otros condimentos, hasta que el fuerte calor de la grasa fue absorbido, luego se secó la comida y se mantuvo en los impermeables hechos de la piel de oveja. Lo prepararon como comida o sopa añadiendo agua para renovar el alimento seco. Hoy en día, el pimiento rojo, que se acepta como una fuente indispensable de goulash, se comenzó a agregar al siglo XVIII. El clásico "goulash de olla" está hecho con tofu frito en la grasa de carne de res o carne de oveja cortada con cebolla picada. Complemente esta comida con ajo, comino, tomate, pimiento verde y papas.

Gulaş, Macaristan'ın geleneksel yemeklerinden biridir. Genellikle dana eti, soğan, kırmızı biber ve biberden yapılır. Gulaşın kökeni, 9. yy'da Macar çobanların yediği bir haşlama yemeğidir. Yemeğin adı, Macarcada "sığır güden kişi, çoban" anlamına gelir. 9. yy'da Macar çobanlar, sürüleri otlatmaya götürmeden önce yola çıkarken, yanlarına taşıyabilecekleri yiyecekler alırdı. Kuşbaşı etleri soğan ve diğer tat vericilerle birlikte ağır ateşte yağı eminceye dek pişirir, daha sonra yemeği kurutur ve koyun işkembesinden yapılan tulumlarda saklardı. Kurutulmuş haldeki yiyeceğin yenilecek kadarına su katarak, yemek ya da çorba şeklinde hazırlardı. Günümüzde gulaşın vazgeçilmez baharatı kabul edilen kırmızı biber, yemeğe 18. yy'da eklenmeye başlandı. Klasik "tencere gulaşı", soğanla kuşbaşı doğranmış sığır ya da koyun etinin domuz yağında kızartılmasıyla yapılır. Bu yemeğe tamamlayıcı olarak, sarımsak, kimyon, domates, yeşil biber ve patates de konulur.
