Ulex è un genere di piante da fiore nella famiglia Fabaceae. Il genere comprende circa 20 specie di arbusti sempreverdi spinosi nella Faboideae subfamiglia della famiglia delle piselli Fabaceae. Le specie sono naturali in parti dell'Europa occidentale e dell'Africa nord-occidentale, con la maggioranza delle specie in Iberia. Il gallo è strettamente legato alle ginestre, e come loro, ha gambi verdi e foglie molto piccole ed è adattato alle condizioni di crescita secche. Tuttavia si differenzia per la sua estrema spinatura, i germogli vengono modificati in spine ramificate lunghe 1-4 centimetri, che quasi interamente sostituiscono le foglie come organi fotosintetici funzionanti della pianta. Le foglie delle piante giovani sono trifoliate, ma in piante mature vengono ridotte a scale o piccole spine. Tutte le specie hanno fiori gialli, generalmente appariscenti, alcuni con una stagione di fioritura molto lunga.
