एक प्रकार का खट्टा रस जो कई
प्रकार से बनाया जाता है और जिसमें अचार ओर बडे़ आदि
भी पड़ते है ।
विशष — य़ह पाचक होता है और अपच में दिया जाता है । इसके
बनाने की प्रधान रीतियाँ ये है०,— ( क) चावल के माँड को
मिट्टी के बर्तन में तीन दिन तक राई में मिलाकर
रखते हैं और उसमें नमक आदि डालते हैं ।(ख) राई को
पिसकर पानी में घोलते हैं और फिर उसमें नमक, जीरा, सोंठ
आदि मिलाकर मिट्टी के बर्तन में रखते हैं । उठने या खट्टा होने के पहले बडे़ और अचार उसमें डालते हैं । (ग) दही के पानी
में राई नमक मिलाकर रख देते हैं और उठने पर काम में
लाते हैं । (घ) चीनी और नीबू का रस अथवा सिरका
मिलाकर पकाते और किमाम बनाते हैं ।
