Fruktoza lub cukier owocowy to prosty monosacharyd ketonowy występujący w wielu roślinach, gdzie często jest związany z glukozą, tworząc disacharydową sacharozę. Jest to jeden z trzech dietetycznych monosacharydów wraz z glukozą i galaktozą, które są absorbowane bezpośrednio do krwiobiegu podczas trawienia. Fruktoza została odkryta przez francuskiego apteki Augustina-Pierre Dubrunfaut w 1847 r. Nazwa "fruktozy" została założona w 1857 roku przez angielskiego chemika Williama Millera. Czysta, sucha fruktoza jest bardzo słodką, białą, bez zapachową, krystaliczną substancją stałą i jest najbardziej rozpuszczalną w wodzie ze wszystkich cukrów. Ze źródeł roślinnych fruktoza występuje w owocach miodu, drzewa i winorośli, kwiatów, jagód i większości warzyw korzeniowych. Na rynku fruktoza często pochodzi z trzciny cukrowej, buraków cukrowych i kukurydzy. Krystaliczną fruktozą jest monosacharyd, suszony, mielony i o dużej czystości. Syrop kukurydziany o dużej zawartości fruktozy jest mieszaniną glukozy i fruktozy jako monosacharydów. Sacharoza jest związkiem z jedną cząsteczką glukozy kowalencyjnie związanej z jedną cząsteczką fruktozy.

Fructose, or fruit sugar, is a simple ketonic monosaccharide found in many plants, where it is often bonded to glucose to form the disaccharide sucrose. It is one of the three dietary monosaccharides, along with glucose and galactose, that are absorbed directly into the bloodstream during digestion. Fructose was discovered by French chemist Augustin-Pierre Dubrunfaut in 1847. The name "fructose" was coined in 1857 by the English chemist William Miller. Pure, dry fructose is a very sweet, white, odorless, crystalline solid and is the most water-soluble of all the sugars. From plant sources, fructose is found in honey, tree and vine fruits, flowers, berries, and most root vegetables. Commercially, fructose is frequently derived from sugar cane, sugar beets, and maize. Crystalline fructose is the monosaccharide, dried, ground, and of high purity. High-fructose corn syrup is a mixture of glucose and fructose as monosaccharides. Sucrose is a compound with one molecule of glucose covalently linked to one molecule of fructose.
