Fruktoz
Fruktoz veya meyve şekeri, pek çok bitkide bulunan basit bir ketonik monosakkarittir ve burada sükroz disakarit oluşturmak üzere genellikle glukoza bağlanır. Sindirim sırasında doğrudan kan dolaşımına absorbe edilen glikoz ve galaktoz ile birlikte üç diyet monosakkaridinden biridir. Fruktoz, Fransız kimyager Augustin-Pierre Dubrunfaut tarafından 1847'de keşfedildi. "Fruktoz" adı 1857'de İngiliz kimyager William Miller tarafından üretildi. Saf, kuru fruktoz çok tatlı, beyaz, kokusuz, kristalimsi bir katıdır ve tüm şekerlerden en fazla suda çözünür. Bitki kaynaklarından, fruktoz bal, ağaç ve asma meyvelerinde, çiçeklerde, meyvelerde ve kök sebzelerde bulunur. Ticari olarak, fruktoz sıklıkla şeker kamışı, şeker pancarı ve mısırdan elde edilir. Kristalin fruktoz monosakkarittir, kurutulur, öğütülür ve yüksek saflıkta olur. Yüksek früktozlu mısır şurubu, monosakaritler olarak glikoz ve fruktozun karışımıdır. Sükroz, bir molekül fruktoz ile kovalent bağlanmış bir glikoz molekülü olan bir bileşiktir.
