Ascorbinsäure ist eine natürlich vorkommende organische Verbindung mit antioxidativen Eigenschaften. Es ist ein weißer Feststoff, aber unreine Proben können gelblich erscheinen. Es löst sich gut in Wasser, um leicht sauren Lösungen zu ergeben. Ascorbinsäure ist eine Form von Vitamin C. Es wurde ursprünglich L-Hexuronsäure genannt, aber als es sich als Vitamin C-Aktivität bei Tieren befand, wurde der Vorschlag gemacht, L-Hexuronsäure umzubenennen. Der neue Name für L-Hexuronsäure stammt aus a- und scorbutus, der Krankheit, die durch einen Mangel an Vitamin C verursacht wird. Weil es von Glukose abgeleitet ist, können viele Tiere es produzieren, aber die Menschen verlangen es als Teil ihrer Ernährung . Andere Wirbeltiere, denen die Fähigkeit zur Entstehung von Ascorbinsäure fehlt, sind andere Primaten, Meerschweinchen, Teleostfische, Fledermäuse und einige Vögel, die alle als Nahrungsergänzungsmittel erfordern. Es existiert eine D-Ascorbinsäure, die in der Natur nicht vorkommt. Es kann künstlich synthetisiert werden. Es hat identische antioxidative Eigenschaften zu L-Ascorbinsäure noch hat weit weniger Vitamin C-Aktivität. Diese Tatsache wird als Beweis dafür angesehen, dass die antioxidativen Eigenschaften von Ascorbinsäure nur ein kleiner Teil ihrer wirksamen Vitaminaktivität sind.
