Ein Ebullioscope ist ein Instrument zur Messung des Siedepunkts einer Flüssigkeit. Das Verfahren ist als Ebullioskopie bekannt. Das erste Ebullioscope wurde 1838 von Brossard-Vidal erfunden und wurde zur Messung des Alkoholgehaltes verwendet. Der Vorteil dieser Methode war, dass der Siedepunkt relativ unempfindlich gegenüber anderen Komponenten wie Zucker ist. Ältere Alkoholimeter basierten auf der Messung der Dichte, die empfindlicher auf das Vorhandensein anderer Solute ist. Eine spätere Version wurde von der französischen Chemikerin François-Marie Raoult gebaut, aber die Schwierigkeit, die genaue Temperatur zu bestimmen, wurde durch die Erfindung des Beckmann-Thermometers von Ernst Otto Beckmann im Jahre 1887 überwunden. Diese Verbesserung machte das Ebullioscope zu einem Standardapparat, um das Molekül zu bestimmen Gewicht der Substanzen in Lösung unter Verwendung der ebullioscopischen Konstante des Lösungsmittels.
