Ester sind chemische Verbindungen, die aus einem an eine Etherbindung angrenzenden Carbonyl bestehen. Sie werden durch Umsetzen einer Oxosäure mit einer Hydroxylverbindung wie einem Alkohol oder Phenol abgeleitet. Ester werden üblicherweise von einer anorganischen Säure oder einer organischen Säure abgeleitet, in der mindestens eine -OH-Gruppe durch eine -O-Alkylgruppe ersetzt ist und am häufigsten aus Carbonsäuren und Alkoholen besteht. Das heißt, Ester werden durch Kondensation einer Säure mit einem Alkohol gebildet. Ester sind ubiquitär. Die meisten natürlich vorkommenden Fette und Öle sind die Fettsäureester von Glycerin. Ester mit niedrigem Molekulargewicht werden üblicherweise als Duftstoffe verwendet und in ätherischen Ölen und Pheromonen gefunden. Phosphoide bilden das Rückgrat von DNA-Molekülen. Nitratester wie Nitroglycerin sind für ihre explosiven Eigenschaften bekannt, während Polyester wichtige Kunststoffe sind, wobei Monomere durch Esteranteile verknüpft sind.
