Einige Verdickungsmittel sind Geliermittel, die ein Gel bilden und sich in der flüssigen Phase als Kolloidmischung lösen, die eine schwach kohäsive innere Struktur bildet. Andere wirken als mechanische thixotrope Additive mit diskreten Partikeln, die anhaften oder verriegeln, um der Belastung zu widerstehen. Verdickungsmittel können auch verwendet werden, wenn medizinische Erkrankungen wie Dysphagie Personen Schwierigkeiten beim Schlucken verursachen. Verdickte Flüssigkeiten spielen eine entscheidende Rolle bei der Verringerung des Aspirationsrisikos für Dysphagie-Patienten.
