Eiweiß
Eiweiß ist der gemeinsame Name für die klare Flüssigkeit, die in einem Ei enthalten ist. Bei Hühnern wird es aus den Schichten der Sekrete des vorderen Abschnitts des Hühner-Ovidukts während des Durchgangs des Eies gebildet. Es bildet sich entweder befruchtete oder unbefruchtete Eigelb. Der primäre natürliche Zweck von Eiweiß ist, das Eigelb zu schützen und zusätzliche Nahrung für das Wachstum des Embryos zur Verfügung zu stellen. Eiweiß besteht in erster Linie aus etwa 90% Wasser, in das 10% Proteine aufgelöst werden. Anders als das Eigelb, das in Lipiden hoch ist, enthält Eiweiß fast kein Fett und der Kohlenhydratgehalt beträgt weniger als 1%. Eiweiß enthält knapp über 50% des Proteins im Ei. Eiweiß hat viele Verwendungen in Lebensmitteln und auch viele andere Verwendungen.
