Pektin
Pektin ist ein strukturelles Heteropolysaccharid, das in den primären Zellwänden von terrestrischen Pflanzen enthalten ist. Es wurde zuerst isoliert und beschrieben im Jahre 1825 von Henri Braconnot. Es wird kommerziell als weißes bis hellbraunes Pulver hergestellt, das hauptsächlich aus Zitrusfrüchten gewonnen wird und in der Nahrung als Geliermittel, insbesondere bei Marmeladen und Gelees, verwendet wird. Es wird auch in Füllungen, Medikamenten, Süßigkeiten, als Stabilisator in Fruchtsäften und Milchgetränken und als Quelle für Ballaststoffe verwendet.
