Ein Tamale ist ein traditionelles mesoamerikanisches Gericht aus Masa, das in einer Blatthülle gedämpft oder gekocht wird. Die Verpackung wird vor dem Essen weggeworfen. Tamales kann mit Fleisch, Käse, Obst, Gemüse, Chilies oder jeglicher Vorbereitung nach Geschmack gefüllt werden, und sowohl die Füllung als auch die Kochflüssigkeit können gewürzt werden. Tamales ist auf die alten Maya-Leute zurückgeführt worden, die sie schon vor der vorklassischen Zeit für Feste vorbereiteten. Maya-Leute nannten ihre Mais-Tortillas und tamales beide utah. Tamales entstand in Mesoamerica schon 8000 bis 5000 v.Chr. Azteken und Maya-Zivilisationen, sowie die Olmeca und Tolteca vor ihnen, benutzten Tamales als tragbares Essen, oft um ihre Armeen zu unterstützen, aber auch für Jäger und Reisende. Tamale-Gebrauch im Inka-Reich war schon lange bekannt, bevor die Spanier die Neue Welt besuchten. Die Vielfalt der einheimischen Sprachen in Mesoamerika führte zu einer Reihe von lokalen Worten für die Tamal, von denen viele in Gebrauch bleiben. Der spanische Singular der Tamales ist tamal. Das englische Wort "tamale" ist eine amerikanische Rückbildung von Tamales.
