Vernalisierung ist der Erwerb der Fähigkeit einer Pflanze, im Frühjahr zu blühen, indem sie der längeren Kälte des Winters oder einem künstlichen Äquivalent ausgesetzt ist. Nach der Vernalisation haben Pflanzen die Fähigkeit zur Blüte erworben, aber sie können zusätzliche saisonale Hinweise oder Wochen des Wachstums erfordern, bevor sie tatsächlich blühen werden. Viele Pflanzen, die in gemäßigten Klimazonen angebaut werden, erfordern Vernalisation und müssen eine Periode der niedrigen Wintertemperatur erleben, um den Blütenprozess zu initiieren oder zu beschleunigen. Damit wird sichergestellt, dass die Fortpflanzungsentwicklung und die Saatgutproduktion im Frühjahr und Sommer statt im Herbst stattfinden. Die benötigte Erkältung wird oft in kühlen Stunden ausgedrückt. Typische Vernalisationstemperaturen liegen zwischen 5 und 10 Grad Celsius. Für viele mehrjährige Pflanzen, wie Obstbaumarten, wird zunächst eine Kältezeit benötigt, um die Ruhe zu veranlassen, und dann später, nach der erforderlichen Zeit, aus dieser Ruhe vor der Blüte wieder auftauchen. Viele monokarpische Einjährige und Biennalen, darunter einige Ökotypen von Arabidopsis Thaliana und Winter Getreide wie Weizen, müssen durch eine verlängerte Zeit der Kälte vor der Blüte auftreten.
