Trypsin
Trypsin ist ein Verdauungsenzym, das vom Körper ausgeschieden wird und ist die wichtigste Protease mit Pepsin. Dieses Enzym wurde von einer Person namens Quine im Jahre 1874 entdeckt. Es hat einen Spaltungsmechanismus, der Arginin- und Lysinreste in der Peptidaminosäuresequenz hydrolysiert. Im Falle von Interesse wird es in Form von Trypsinogen sezerniert. Nach der Sekretion wird es durch Trypsin aktiviert, um das Protein oder Peptid zu hydrolysieren. Soja hat ein spezifisches Protein, das die Aktivität von Trypsin stört, also verdirbt es nicht gut, wenn man Bohnen trinkt. Wenn jedoch Soja erhitzt wird, wird diese Proteinkomponente denaturiert. Als Ergebnis wird Trypsin aktiviert, was den Eintritt von Verdauungsenzymen erleichtert.
