Mi oder mee aus ungesäuertem Teig, zu einer dünnen, abgeflachten Linie oder einem kreisförmigen Zylinder geformt und in einer kochenden Flüssigkeit gekocht. Je nach Typ können die Nudeln vor dem Kochen trocken oder gekühlt serviert werden. Das Wort "mi" kommt vom Wort Hokkien für das chinesische Wort "麪", weil es auch aus China kommt. Die erste Notiz über Nudeln wurde während der östlichen Han-Dynastie etwa 25 und 220 M produziert. Im Oktober 2005 wurde der älteste jemals entdeckte Mole auf dem Gelände von Lajia am Gelben Fluss in Qinghai, China, gefunden. Der 4.000 Jahre alte Mi sieht aus wie ein Schuster und ein Proso.
