Brunoise is the technical term for a type of cutting of vegetables used in cooking. These are small cubic vegetables such as carrots, peppers, courgettes, celery, leeks, cabbages or onions. The Brunoise is used as an accompaniment for soups and sauces, but also as an admixture for fish and rice dishes, as well as for decorating salad dishes. Vegetable brunoise is also used in aspic.
