The word lipophob comes from ancient Greek, meaning fat avoiding. This property describes liquid substances such as, For example, water which can not be mixed with fats and oils but form an emulsion. The reason for the poor miscibility is the fact that the molecules of the lipophobic liquid attract considerably more strongly than they are attracted by the fat molecules, or that these attract considerably more strongly among themselves. Due to the different attraction, the molecules of the two liquids collect separately. Molecules of lipophobic liquids often attract themselves together with the van der Waals force and are thus hydrophilic, H. water soluble. For the mixing of lipophobic substances with fat, surfactants can be used. These are amphiphilic, ie both fat and water soluble. The opposite of lipophob is lipophilic.

Das Wort lipophob kommt aus dem Altgriechischen und bedeutet Fett meidend. Diese Eigenschaft beschreibt flüssige Stoffe wie z. B. Wasser, die sich nicht mit Fetten und Ölen mischen lassen, sondern eine Emulsion bilden. Der Grund für die schlechte Mischbarkeit liegt darin, dass sich die Moleküle der lipophoben Flüssigkeit untereinander deutlich stärker anziehen, als sie von den Fettmolekülen angezogen werden, oder dass sich diese untereinander deutlich stärker anziehen. Durch die unterschiedliche Anziehung sammeln sich die Moleküle der beiden Flüssigkeiten getrennt. Moleküle lipophober Flüssigkeiten ziehen sich untereinander häufig mit der Van-der-Waals Kraft an und sind dadurch hydrophil, d. h. wasserlöslich. Zum Mischen von lipophoben Stoffen mit Fett können Tenside eingesetzt werden. Diese sind amphiphil, also sowohl Fett- als auch wasserlöslich. Das Gegenteil von lipophob ist lipophil.
