Osmophilic organisms grow similar to halophiles in habitats with low water activity. The growth-limiting factor here is high sugar concentrations. They protect themselves from the high osmotic pressure caused by the synthesis of compatible solutes. Almost all osmophilic organisms are classified as yeasts. An important role is played by osmophilic yeasts as a source of spoilage in the sugar and confectionery industry. They can be infected with honey, fruit syrups, fruit juice concentrates, liquid sugar, toasted sausages, in extreme cases also marzipan and shoe polish. They include: Saccharomyces rouxii; Saccharomyces bailii; Saccharomyces. Bisporus var. Mellis; Saccharomyces cerevisiae, Debaryomyces.

Sie schützen sich vor dem hohen osmotischen Druck durch die Synthese von kompatiblen Soluten. Fast alle osmophilen Organismen sind den Hefen zuzuordnen. Eine wichtige Rolle spielen osmophile Hefen als Verderbniserreger in der Zucker- und Süsswarenindustrie. Sie können Honig, Fruchtsirups, Fruchtsaftkonzentrate, Flüssigzucker, Pökellaken, in extremen Fällen auch Marzipan und Schuhcreme befallen. Zu den ihnen zählen: Saccharomyces rouxii; Saccharomyces bailii; Saccharomyces. bisporus var. mellis; Saccharomyces cerevisiae, Debaryomyces.
