Confectionery (technical)
Confectionery is the technique by which certain foods are processed by permanently exposing them to a substance, usually for their preservation. The chosen substance then penetrates the food and is incorporated into it, or even reacts with it. Every confectionery plant is also called a confectionery factory, where confectionery is used. Sugar, honey, brandy, grease, salt, vinegar, \u0026 c. The result is what is generally called a confit. For example, fruits can be confec- ted with brandy or sugar. Goose, duck, foie gras and pork can be preserved by slow cooking in their fat. The olives are confited to brine to remove their bitterness.
