Roasting
Roasting is a method of cooking that exposes food to a high source of dry heat in the open air or in an oven. Roasting generally causes caramelization or Maillard reaction on the surface of the food piece thus prepared, which is considered an improvement in its flavor. Meat and most root vegetables and bulb vegetables can be roasted. A piece of meat and especially red meat, cooked in this way, is called roast. Meat and vegetables prepared in this way are described as roasts. Some foods such as coffee beans, cocoa beans or hazelnuts can also be roasted to improve their aroma.
