Alpha starch When starch is added with water and heated or hydrolyzed with a sodium hydroxide solution, the crystal structure of the starch can not be determined by X-ray. This change is called α-starch of raw starch (β-starch). Fresh starch does not digest well. In general, in the case of cereal, ① the higher the heating temperature, ② the higher the amount of water to be added, ③ the longer the dipping in water before heating, and ④ the higher the degree of accuracy, the easier it is to turn into α. 녹말에 물을 가하고 가열하거나 수산화나트륨 용액으로 호화시키면, X선으로도 그 결정구조를 알아볼 수가 없는 상태의 녹말로 이러한 변화를 생녹말(β-녹말)의 α화라고 한다. 생녹말은 소화가 잘 안 된다. α화하는 조건은 일반적으로 곡류에서는 ① 가열온도가 높을수록, ② 첨가하는 물의 양이 많을수록, ③ 가열하기 전에 물에 담근 시간이 길수록, ④ 도정도(搗精度)가 높을수록 α화하기 쉽다. 아용 곡분(穀粉) ·비스킷 등이 있다.
