Bubble Drying Method This drying method is a drying method developed by Morgane et al. The principle is to concentrate the liquid food to a high viscosity, add a viscous or surfactant, and convert it into a complete foam mass by forming a bubble with a wire mixer or high pressure gas. This is spread over a perforated metal drying dish to a certain thickness and blowing dry air from under the drying dish to form a rupture or break layer in the foam layer. The foam layer on which the rupture mold is formed is transferred to a drying chamber and heated and dried in three stages by hot air at different temperatures. In the United States, it is industrialized in the drying of juices such as oranges, apples, and tomatoes. 거품건조법 이 건조방법은 미국농무성 서부연구소에서 Morgane 등이 1959년경에 개발한 건조방법이다. 원리는 액상식품을 고점도까지 농축하거나 점질물 또는 계면활성제를 첨가하고 와이어 혼합기(wire mixer) 또는 고압가스로 기포를 형성하여 완전한 거품덩어리로 바꾼다. 이것을 구멍 뚫린 금속 건조접시 위에 일정한 두께로 펴고 건조접시의 밑에서부터 건조공기를 불어 주어거품층에 파열구 또는 파괴층을 형성시킨다. 이 파열구가 형성된 거품층을 건조실로 옮겨 다른 온도의 열풍에 의해 3단계로 가열건조시킨다. 미국에서는 오렌지, 사과, 토마토 등의 과즙의 건조에 공업화되어 있다.
