Pecorino - rennet cheese, obtained from sheep's milk, ripened, hard, slightly spicy, originating in Italy. Formerly bred by shepherds, now produced on a larger scale. There are 6 varieties of this cheese officially registered in the European Union as the PDO - Protected Designation of Origin (in Italian: DOP Denominazione di origine protetta): ▪ Pecorino Romano (about the production methods of pecorino romano were first written by Warrona and Pliny Elder about 2000 years ago. It was created on the outskirts of Rome, produced mainly in Sardinia, Lazio and Grosseto Province in Tuscany since 1884. ▪ Pecorino Sardo (also known as Fiore Sardo) of Sardinia ▪ Pecorino Toscano, mentioned by Pliny the Elder in History Natural and Francesco Molinelli in their memoirs of Tuscan cheeses from the 17th century. ▪ Pecorino Siciliano ▪ Pecorino di Filiano ▪ Pecorino di Picinisco (from 2013) Pecorino – ser podpuszczkowy, otrzymywany z owczego mleka, dojrzewający, twardy, lekko pikantny, pochodzący z Włoch. Dawniej warzony przez pasterzy, obecnie wytwarzany na większą skalę. Istnieje 6 odmian tego sera oficjalnie zarejestrowanych w Unii Europejskiej jako CHNP – Chroniona nazwa pochodzenia (w języku włoskim: DOP Denominazione di origine protetta): ▪ Pecorino Romano (o metodach produkcji pecorino romano pisali po raz pierwszy Warrona i Pliniusz Starszy ok. 2000 lat temu; został stworzony na obrzeżach Rzymu; produkowany od 1884 r. głównie na Sardynii, Lazio i prowincji Grosseto w Toskanii ▪ Pecorino Sardo (znany też jako Fiore Sardo) z Sardynii ▪ Pecorino Toscano, o którym wspomina m.in.
