CAFTA is the name of a kind of meatballs that are part of the cuisine of most countries that resulted from the collapse of the Ottoman Empire, including the countries of Central Asia and the Caucasus, the Balkans, Turkey, Iran, the Middle East and the North of Africa. The name varies from كفته, kufta or kafta, köfte in Turkish; κεφτές, keftés or "keftedes" in Greek; "Kyufta" in Armenia and "kufteh" or "koofteh" in Iran, apparently all derived from Persian kūfta, form of the verb کوفتن, kuftan, "beat", "moer", "meatball". A recipe indicates a mixture of ground beef, chopped onion, parsley or mint also finely chopped, ground cumin and cinnamon, black pepper, salt and pepper; leave the mixture in the fresh for 1-2 hours to let the flavors blend and make it easier to work it. Usually, balls are made, oval or flattened, like the frikadeller of Denmark, or even as sausages, mainly in Turkey, where they are then put on a skewer to be grilled. O nome varia de كفته, kufta ou kafta, köfte em turco; κεφτές, keftés ou “keftedes” em grego; “kyufta” na Arménia e “kufteh” ou “koofteh” no Irão, aparentemente todos derivados do persa kūfta, forma do verbo کوفتن, kuftan, "bater", "moer", "almôndega".
