quiche

Quiche

Quiche is a type of pie made with egg-filling and sour cream to which bits of smoked bacon are added, and which does not take cover. Although currently the Quiche is a traditional dish of French cuisine, its origin is German, from the medieval kingdom of Lothringen. Later the French called him "Lorraine." The word quiche comes from the German "kuchen", which means "pie". The original Lorraine quiche was born in the 16th century and was an open pie stuffed with cream made from milk and eggs plus smoked bacon. Only later cheese was added to the Lorraine quiche. Adding onions gives the alsacian quiche. The quiche became popular in England shortly after World War II and in the United States in the 1950s. Today one can find a wide variety of quiches, from the original quiche Lorraine, to those with leeks, champignon, spinach and even fish such as salmon. References ^ Priberan ^ Austin, Thomas, ed. Two Fifteenth-Century Cookery Books. London, EETS OS 91, 1888, repr. 1964.
