Edible algae are traditionally used in Japanese cuisine (kombu, nori, mekabu, wakame), but also in the European, especially in the northern countries, the UK and Ireland (kelp, carrageen / caragheen, Irish moss) by-sea ") or dried and pressed; they are also used as raw material for the production of gelling agents; agar-agar.
