Fructosa
La fructosa, o azúcar de frutas, es un monosacárido cetónico simple encontrado en muchas plantas, donde a menudo se une a la glucosa para formar el disacárido de sacarosa. Es uno de los tres monosacáridos dietéticos, junto con glucosa y galactosa, que son absorbidos directamente en el torrente sanguíneo durante la digestión. La fructosa fue descubierta por el químico francés Augustin-Pierre Dubrunfaut en 1847. El nombre "fructosa" fue acuñado en 1857 por el químico inglés William Miller. La fructosa pura y seca es un sólido cristalino muy dulce, blanco, inodoro y es el más soluble en agua de todos los azúcares. A partir de fuentes vegetales, la fructosa se encuentra en miel, árboles y frutas de vid, flores, bayas y la mayoría de las hortalizas de raíz. Comercialmente, la fructosa se deriva frecuentemente de caña de azúcar, remolacha azucarera y maíz. La fructosa cristalina es el monosacárido, seco, molido y de alta pureza. Jarabe de maíz de alta fructosa es una mezcla de glucosa y fructosa como monosacáridos. La sacarosa es un compuesto con una molécula de glucosa unida covalentemente a una molécula de fructosa.
