Rafinosa
La rafinosa es un trisacárido compuesto de galactosa, glucosa y fructosa. Se puede encontrar en frijoles, repollo, coles de Bruselas, brócoli, espárragos, otras verduras y granos enteros. La rafinosa puede hidrolizarse a D-galactosa y sacarosa por la enzima α-galactosidasa, una enzima que no se encuentra en el tracto digestivo humano. Α-GAL también hidroliza otros α-galactósidos tales como estaquiosa, verbascosa y galactinol, si están presentes. La enzima no escinde la galactosa β-enlazada, como en la lactosa. La familia de los oligosacáridos de la rafinosa son derivados alfa-galactosilo de la sacarosa, y los más comunes son el trisacárido rafinosa, el tetrasacárido estaquiosa y el pentasacárido verbascosa. Las RFOs son casi omnipresentes en el reino vegetal, encontrándose en una gran variedad de semillas de muchas familias diferentes, y ocupan el segundo lugar después de la sacarosa en abundancia como carbohidratos solubles. Los seres humanos y otros animales monogástricos no poseen la enzima α-GAL para descomponer las RFO y estos oligosacáridos pasan sin digerir a través del estómago y el intestino superior.
