Tanino
Un tanino es un compuesto polifenólico vegetal astringente y amargo que se une y precipita proteínas y varios otros compuestos orgánicos incluyendo aminoácidos y alcaloides. El término tanino se refiere al uso de taninos de madera de roble en el curtido de pieles de animales en cuero; De ahí las palabras "bronceado" y "bronceado" para el tratamiento del cuero. Sin embargo, el término "tanino" por extensión se aplica ampliamente a cualquier compuesto polifenólico grande que contenga hidroxilos suficientes y otros grupos adecuados para formar complejos fuertes con diversas macromoléculas. Los taninos tienen pesos moleculares que varían de 500 a más de 3.000 y hasta 20.000.
