La goma de xantano es un polisacárido secretado por la bacteria Xanthomonas campestris, utilizado como aditivo alimentario y modificador de la reología, comúnmente utilizado como un agente espesante para alimentos y un estabilizador. Se compone de unidades de repetición de pentasacárido, que comprenden glucosa, manosa y ácido glucurónico en la relación molar 2,0: 2,0: 1,0. Se produce por la fermentación de glucosa, sacarosa o lactosa. Después de un período de fermentación, el polisacárido se precipita a partir de un medio de crecimiento con alcohol isopropílico, se seca y se tritura en un polvo fino. Más tarde, se añade a un medio líquido para formar la goma.
