El yogur es un alimento que resulta de la fermentación bacteriana. La bacteria utilizada para producir yogurt se conoce como "cultura del yogur". La fermentación láctica por esta bacteria produce ácido láctico que actúa sobre la leche proteínica para dar al yogur una textura distintiva y sentido del olfato. En todo el mundo, la leche de vaca promedio es la caseína, utilizada principalmente para hacer yogur, además de leche de búfala, cabra, oveja, caballo, camello y yak. El yogur lácteo se produce utilizando el cultivo bacteriano de Lactobacillus delbrueckii subsp. bulgaricus con Streptococcus thermophilus. Además, a veces otros tipos de bacterias de los grupos Lactobacillus y Bifidobacterium se mezclan cuando o después del yogurt.
