Les mollusques ou les mollusques / mɒləsks / composent le grand phylum d'animaux invertébrés connu sous le nom de Mollusca. Environ 85 000 espèces de mollusques existantes sont reconnues. Les mollusques sont le plus grand phylum marin, représentant environ 23% de tous les organismes marins désignés. De nombreux mollusques vivent également dans des habitats terrestres et d'eau douce. Ils sont très diversifiés, pas seulement en taille et en structure anatomique, mais aussi en comportement et en habitat. Le phylum est généralement divisé en 9 ou 10 classes taxonomiques, dont deux sont complètement éteintes. Les mollusques de céphalopodes, tels que les calmars, les seiches et les pieuvres, sont parmi les invertébrés les plus neurologiquement avancés, et le calmar géant ou le calmar colossal est la plus grande espèce d'invertébrés connus. Les gastéropodes sont de loin les mollusques les plus nombreux en termes d'espèces classées et représentent 80% du total. L'étude scientifique des mollusques s'appelle malacologie. Les trois caractéristiques les plus universelles qui définissent les mollusques modernes sont un manteau avec une cavité importante utilisée pour la respiration et l'excrétion, la présence d'une radule et la structure du système nerveux.
