Les stérols, ou alcools stéroïdiens, sont un sous-ensemble de stéroïdes et possèdent un groupe hydroxyle en position 3 du cycle A. Lipides amphipathiques synthétisés à partir de l'acétyl coenzyme A La molécule a une forme plate. L'hydroxyle est dans l'anneau A, la molécule est l'apoly arrière. Les stérols sont importants dans la physiologie des organismes eucaryotes. Ils se déroulent dans la membrane cellulaire et régulent sa fluidité et sa fonction. Ils contribuent également au processus de développement en tant que messagers secondaires. Différents organismes utilisent différents stérols. Les plus importants sont le cholestérol, le phytostérol et les hormones stéroïdiennes chez les animaux, l'ergostérol chez les champignons, le campestérol chez les plantes, le sitostérol et le stigmate.
