Değirmenlerde gerek buğdayın, gerekse pirincin öğütülmesi tiaminin büyük çapta kaybolmasına yol açmaktadır. Beyaz buğday unundan yapılmış olan ekmek yenilmesi, batı ülkelerinde bile zaman zaman beriberi vakalarının görülmesine yol açmaktadır. Yapay tiamin çok ucuzdur; bazı ülkelerde değirmenciler beyaz una bu maddeyi katmak zorundadırlar. Normal bir hayat yaşayan bir erişkinin günde 1,3 mg kadar tiamin alması gerekir. Islak ve kuru olmak üzere, başlıca iki tipi vardır.
