L'avidina è una proteina biotina tetramerica o dimerica prodotta negli ovuli di uccelli, rettili e anfibi e depositata nei bianchi delle loro uova. Nell'uovo di pollo, l'avidina rappresenta circa lo 0,05% della proteina totale. La proteina tetramerica contiene quattro subunità identiche, ognuna delle quali può legarsi alla biotina con un elevato grado di affinità e specificità. La costante di dissociazione dell'avidina è misurata per essere KD ≈ 10-15 M, rendendola una delle leghe non covalenti più conosciute. Nella sua forma tetramerica, l'avidina è stimata tra i 66-69 kDa di dimensione. Il 10% del peso molecolare è attribuito al contenuto di carboidrati composto da quattro a cinque mannosi e tre residui di N-acetilglucosamina. Le parti carboidrati dell'avidin contengono almeno tre tipi strutturali oligosaccharidi unici che sono simili nella struttura e nella composizione. L'avidina funzionale si trova solo nell'uovo crudo, poiché l'avidità biotina della proteina viene distrutta dalla cottura. La funzione naturale dell'avidin nelle uova non è nota, anche se è stato postulato per essere fatto nell'ovidotto come un inibitore della crescita batterica, legando la biotina necessaria ai batteri.
