Fruttosio
Il fruttosio, o lo zucchero di frutta, è un semplice monosaccharide chetonico trovato in molte piante, dove è spesso legato al glucosio per formare il saccarosio disaccharide. È uno dei tre monosaccharidi dietetici, insieme al glucosio e al galattosio, che vengono assorbiti direttamente nel flusso sanguigno durante la digestione. Il fruttosio fu scoperto dal chimico francese Augustin-Pierre Dubrunfaut nel 1847. Il nome "fruttosio" fu coniato nel 1857 dal chimico inglese William Miller. Il fruttosio puro e secco è un solido dolce, bianco, inodore e cristallino ed è il più solubile in acqua di tutti gli zuccheri. Dalla fonte vegetale, il fruttosio si trova in miele, albero e vite, fiori, bacche e la maggior parte delle verdure radicate. Commercialmente, il fruttosio è spesso derivato da canna da zucchero, barbabietole da zucchero e mais. Il fruttosio cristallino è il monosaccharide, essiccato, macinato e di alta purezza. Lo sciroppo di mais ad alto fruttosio è una miscela di glucosio e fruttosio come monosaccharidi. La saccarosio è un composto con una molecola di glucosio collegata covalentemente ad una molecola di fruttosio.
