Il carico glicemico dell'alimento è un numero che stima quanto il cibo aumenta il livello di glucosio nel sangue di una persona dopo averlo mangiato. Un'unità di carico glicemico approssima l'effetto di consumo di un grammo di glucosio. Il carico glicemico rappresenta la quantità di carboidrati nel cibo e quanto ogni grammo di carboidrati nel cibo aumenta i livelli di glucosio nel sangue. Il carico glicemico è basato sull'indice glicemico ed è definito come la frazione del carboidrato disponibile nei tempi di alimento del GI di cibo. Il carico glicemico stimola l'impatto del consumo di carboidrati usando l'indice glicemico tenendo conto della quantità di carboidrati consumata. GL è una misura del pH del contenuto di carboidrati. Per esempio, l'anguria ha un alto livello GI, ma una tipica dose di anguria non contiene molto carboidrati, quindi il carico glicemico di mangiare è basso. Mentre l'indice glicemico è definito per ogni tipo di cibo, il carico glicemico può essere calcolato per qualsiasi dimensione che serve di un alimento, un intero pasto o un paniere intero. Il carico glicemico di una porzione di cibo può essere calcolato come il suo contenuto di carboidrati misurato in grammi, moltiplicato per il GI di cibo e diviso per 100.
