CHE SIGNIFICA JAPANESE PERSIMMON IN INGLESE
Diospyros kaki
Il kaki diospyros, meglio conosciuto come il cacho giapponese, il cachi kaki o il cachi asiatico in Nord America, è la specie più coltivata del genere Diospyros. Sebbene la sua prima botanica descritta non fosse fino al 1780, la kaki è tra le piante più antiche in coltivazione, conosciuta per il suo uso in Cina per più di 2000 anni. In alcune comunità cinesi rurali, il frutto kaki è visto come avere un grande potere mistico che può essere sfruttato per risolvere mal di testa, mal di schiena e dolore al piede. Il cacho è un frutto dolce, leggermente sporco con una struttura morbida a volte fibrosa. Questa specie, nativa in Cina, è deciduo, con foglie larghe e rigide. La coltivazione si estendeva per la prima volta ad altre parti dell'Asia orientale e venne poi introdotta in California e nell'Europa meridionale nel XIX secolo, fino al Brasile nel 1890, e sono state selezionate numerose cultivar. Una varietà è Diospyros kaki var. Sylvestris Makino. In molte cultivar, note come varietà astringenti, il frutto ha un elevato contenuto di tannino di tipo proanthocyanidin che rende astratto e amaro il frutto immaturo. I livelli di tannino sono ridotti come la frutta matura.
