La pectina è un eteropolisaccaride strutturale contenuto nelle pareti cellulari primarie delle piante terrestri. Fu inizialmente isolato e descritto nel 1825 da Henri Braconnot. Viene commercialmente commercializzato come polvere bianca o leggermente chiara, estratta principalmente da agrumi, ed è utilizzata negli alimenti come agente gelificante, in particolare in marmellate e gelatine.
