Il melone d'inverno, chiamato anche zucca bianca, zucca d'inverno, zucca di salsa, melone cinese conservante o zucca di cenere, è una vite coltivata per il suo grande frutto, mangiato come verdure quando matura. È l'unico membro del genere Benincasa. Il frutto è fuzzy quando giovane. Il melone immaturo ha carne bianca spessa che è dolce quando mangiato. Per maturità, il frutto perde i suoi capelli e sviluppa un rivestimento ceroso, dando origine alla zucca di cera di nome e garantendo una lunga durata di conservazione. Il melone può crescere fino a 80 cm di lunghezza. Anche se il frutto è indicato come un "melone", il coltura pienamente coltivata non è dolce. Originariamente coltivato in Asia Sud-Orientale, il melone d'inverno è ampiamente coltivato anche in Asia Orientale e Sud-Asia. Il melone d'inverno è anche un nome comune per i membri del gruppo di cultivar Inodorus del muskmelon, più comunemente noto come casaba o melone di melata.
