I was born and raised in North Little Rock, Arkansas. I was 15 when I got my first job serving food to the residents in a retirement home - 22 years later I would shoot my first film in one.
When I was a congressman, I had occasion to talk to this group of students who were taking their seat. There were about 80 of them and I asked them, 'How many of you will be serving in the country once you graduate?' And, out of the 80, there were two that raised their hands. The rest were thinking of leaving.
Although the skills aren't hard to learn, finding the happiness and finding the satisfaction and finding fulfillment in continuously serving somebody else something good to eat, is what makes a really good restaurant.
I love to cook. I'd hoped by now I'd have a big loft. I have this fantasy that between 12 and 4, if you're in New York, it's known that I'll be serving a meal and you can just show up. You can watch TV, hang out, nap. Once a month. Wouldn't that be nice?
